Practice is the biggest thing - this took me many months of practice, but I only did a little at a time. Every time I opened Stardew I'd make sure to try a few rounds, and then stop before I got too frustrated.I beat Prairie King a while back, and now I finally beat Junimo Kart! Junimo Kart is still utterly awful. Everything about Stardew is relaxing and rewarding. Except for Junimo Kart. It’s comparable to the flappy goat achievement. It’s just not fun, at all. The rework is no better. It seriously needs to be less punishing on the tight jumps. This is one achievement that will be avoided.

Hitting rocks, barricades, bubbles, and purple mushrooms from the top will not damage you. Sometimes it's better to jump over a slippery slope instead of riding down it, so you don't gain too much speed. The added speed can help, but it can also kill you if you're not used to it.
